Sexipe 002: Spicy Sweet Red Cabbage with Smoke Sausage
Cabbage is one of my favorite vegetables. To spruce up the presentation from regular green cabbage I like to roll with purple cabbage; it's just more romantic and appealing to me. It's tender, healthy, easy to cook, and sweeter than savoy or green cabbage. Here's Sexipe 002: Spicy Sweet Red Cabbage with Smoked Sausage...
Ingredients:
1 Head of Red Cabbage
1 Pack of Smoke Sausage or However Much You Like
1 White Onion
1/4 Cup of Butter
1/4 Cup of Sugar
Honey
Cayenne or Red Pepper Flakes
Vinegar
1/2 Cup of Water
So you first you take you cabbage cut it however thick or thin you like and sprinkle some vinegar on it to retain the purple color. If you don't pour vinegar on the cabbage during the cooking process it will likely turn blue. Afterwards, you dice your onion and throw it in the pan with butter, salt, pepper. While the onions are caramelizing dice your sausage and toss that in there as well. You can cook your sausage as long as you'd like to, then you take your honey pour it in and let it adhere to the sausage. I personally like my sausage to be slightly crispy, it adds a certain depth to the meal.
After you've fully cook the onions and sausage, grab your red cabbage and put it in there along with a 1/2 cup of water. Some may add more water, but cabbage has its own water that expels, which is enough for my liking. Then season the cabbage with pepper flakes and 1/4 cup of sugar. Let the cabbage simmer on low heat or steam for about 30-40 mins. I prefer very tender cabbage, so I let mine cook a little longer.
Once you've done these things cook a few corn muffins or some cornbread to go along with the meal. Plate it up and have her/him eating out of your hands. The cabbage will be spicy and sweet just like any love life should be.
